Menu Plan Monday ~ Spring Eating Edition

 This week our menu planning is all about making the most of the change in season!
The beautiful Spring weather, the change in produce and the fact that we are on school holidays!
 
 
Monday –
It’s our wedding anniversay so we having a child free day!  Who knows what will be for dinner the important thing is I’m not making it!!!
 
Tuesday –
Steak Rotolo
This has always been a hit on My Pigeon Pair and you can read more about it HERE
Basically it is  “Sizzle steak” available at Woolworths, slightly marinated and rolled with fillings inside. We love Bocconcini and grilled capsicum inside!
served with Double Potato Bake (Potato and Sweet Potato) and Salad
Cooked on the Lakeside BBQ because the weather is beautiful and we are all on holidays!!
 
 
Wednesday –
Lamb and Haloumi Skewers
Does anything say spring like Lamb?  The problem is Lamb can be so expensive!!  An easy and cheap way to add some Lamb to your menu is to avoid the chops and roasts!  We have used some Lamb diced add some vegies and cubes of haloumi and grill on the bbq.  We love mushrooms, capsicum and eggplant!
 
Thursday –
Crunchy Chicken Noodle Salad.  
We love Crunchy noodle salad and usually serve it at BBQ’s but why not turn it into a main meal by adding some BBQ chicken to the mix!  With the warmer weather beginning it’s time to bring out the salads!
 
Friday –
Pesto, Pumpkin and Pine Nut Pasta.
After a week of “meaty” meals it’s time for a no meat option!  I have spoken about this EASY recipe before!  Basically roast some pumpkin.  Cook some spaghetti.  Warm through some cream and half a tub of pesto and pine nut dip!  Mix it all together!  I put some pasta aside and just add the pumpkin for the kids as they are not fans of the pesto and pine nuts!
