Menu Plan Monday ~ The Leftover to Lunchbox edition.

So here we go….. my first Monday to Friday Working week since 2006!  We have called in the cavalry and will have the “nanny” and “him” minding the children all week.  This week’s menu plan calls for easy to prepare dinners (he will be doing the cooking) that can be transformed into delicious and healthy lunches (for me!)

Meditteranean Scrolls ~ Taste.com

 

The key to Organisation is really planning ahead so on Sunday I will be baking ~ Apple and Sultana Muffins from Vegie Smugglers and Mediterranean Scrolls from Taste.com.  These can then be eaten by the kids for snacks or for me for morning tea!  I will also pre prepare our salads for the week.

~Monday ~

Dinner ~ Roast Lemon Pepper Chicken with Vegetables

Lunch ~ I made one larger Meditteranean scroll for me to eat on Monday! w/ an apple and sultana muffin and a piece of fruit.

This chicken was reduced at Woolworths on Sunday down to $5 for a whole BBQ Chicken! Such an easy dinner to just cut up some vegies and throw in the oven!

~Tuesday ~

Dinner ~  Lamb Roast with Brown Rice Salad.

Lunch~ Roast Chicken, Tabouli and Salad Wrap w/ Apple and Sultana Muffin

This recipe is a regular on our menu plan circuit.  The Brown Rice Salad is to die for with Coriander and Lime.  It is nice to have something different with a roast instead of vegies!  Couscous also goes beautifully with Lamb.

~Wednesday ~

Dinner ~ Sausage and Tomato Pasta Bake

Lunch ~ Lamb wraps with fetta and salad.

~Thursday~

Dinner ~ Vegetable Quiche with Salad.  This is a cheats dinner!  I found these delicious looking quiches at Woolworths.  This is a nanny day, so its easy enough for me to throw it in the oven once I’m home!

~Friday~

Dinner ~ Convincing him that we should go out to dinner to celebrate the end of term and me surviving the working week!!!

Lunch ~ Quiche and Salad

 There it is 5 days worth of Dinners and leftovers that are transformed into lunches!  So now I have the food covered I just have to worry about what on earth am I going to wear for five days that does not consist of tracksuit pants or pyjamas!
